Cashew dressing with stone ground tahini

We love salads.

They are tasty and healthy, however, what really makes or breaks the deal for many, is the dressing. A bland and boring dressing can totally ruin an awesome salad, just like a scrumptious dressing can put the icing on the cake.

One of our favorites is this vegan, cashew-based dressing that's enriched with creamy, stone ground tahini that adds an extra pinch of earthy flavor. It keeps pretty well in the fridge, for about two weeks, however, you might have to add some extra water when you want to use it as it thickens up. 

(Tahini is a paste made from ground sesame seeds, and it’s packed with essential vitamins and minerals. Not only it's delicious, but one of the best sources of calcium, it also provides a good amount of phosphorus, magnesium, potassium, and iron.)


So to the recipe!

Ingredients:
1 cup cashews, soaked for at least 2 hours
1/2 cup tahini
a handful of cilantro
juice of a lemon
1/2 cup olive oil
Asafoetida Salt + pepper to taste

Instructions:
Blend all the ingredients in a food processor until you have a smooth paste. If it's too thick, you can add some water to make it pourable.
